add green onion (reserve some for topping at the end), fish sauce, and salted shrimp and mix together
add the dashi stock (or water) to a small pot over medium heat. once the broth is simmering, turn the heat down to low
pour the egg mixture into the broth and leave it/do not stir it for 10 seconds. after 10 seconds, slowly stir the eggs for about 3 minutes. once the eggs are almost cooked through, put the lid on and steam for 4 minutes
top with remaining green onion, sesame oil, and a slice of american cheese
