spicy tofu stew (sundubu jjigae)

Ingredients
- 1/2 cup pork belly sliced
- 1/4 cup onion diced
- 3 cloves garlic minced
- 1 tsp sesame oil
- 1-2 tbsp gochugaru adjust to taste
- 1 cup kimchi chopped
- 1 tsp sugar
- 2 cups dashi stock or chicken broth
- 1 tbsp soy sauce
- 1 tsp fish sauce
- 1 tube extra soft tofu
- 2 green onions sliced
- 1 egg
Instructions
- add the pork belly to a pot over medium heat. cook for about 2 minutes
- add the onion and garlic. cook for another 3 minutes
- add the sesame oil, gochugaru to taste, kimchi, and sugar. cook for another 2 minutes
- turn the heat up to high and add the dash stock (or chicken broth). season the broth by adding soy sauce and fish sauce. boil for 15 minutes
- add the tofu, break it up with a spoon and cook for another 10 minutes
- garnish with green onion and crack an egg into the middle. serve with rice and enjoy!
