spicy tofu stew (sundubu jjigae)

Ingredients

  • 1/2 cup pork belly sliced
  • 1/4 cup onion diced
  • 3 cloves garlic minced
  • 1 tsp sesame oil
  • 1-2 tbsp gochugaru adjust to taste
  • 1 cup kimchi chopped
  • 1 tsp sugar
  • 2 cups dashi stock or chicken broth
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tube extra soft tofu
  • 2 green onions sliced
  • 1 egg

Instructions

  • add the pork belly to a pot over medium heat. cook for about 2 minutes
  • add the onion and garlic. cook for another 3 minutes
  • add the sesame oil, gochugaru to taste, kimchi, and sugar. cook for another 2 minutes
  • turn the heat up to high and add the dash stock (or chicken broth). season the broth by adding soy sauce and fish sauce. boil for 15 minutes
  • add the tofu, break it up with a spoon and cook for another 10 minutes
  • garnish with green onion and crack an egg into the middle. serve with rice and enjoy!
