kimchi carbonara

Ingredients
- 5 pieces bacon sliced
- 1 tsp reserved bacon grease
- 5 green onions sliced
- 2 cloves garlic minced
- 1 cup kimchi
- 1 tbsp gochujang
- 1 tsp sugar
- 1/2 lb spaghetti
- 1 cup reserved pasta water
carbonara sauce
- 1 egg
- 2 egg yolks
- 3/4 cup parmesan reggiano freshly grated
Instructions
- cook the bacon in a pan over medium heat. once the bacon is cooked, remove it from the pan and leave about 1 tsp of bacon grease in the pan
- over medium heat, sauté the green onions (reserve some for garnish at the end)
- add the garlic and sauté for about 2 minutes
- add the kimchi, gochujang, and sugar. continue cooking for about 5 minutes and set aside
- cook the pasta until al dente. while the pasta is cooking, prepare the carbonara sauce
- in a small bowl, combine the egg, egg yolks, and cheese. mix thoroughly and set aside
- reserve about a cup of pasta water, then transfer the pasta into the pan with the kimchi mixture. keep the heat on low
- add the carbonara sauce and a splash of pasta water. mix together and keep adding pasta water until you reach your desired consistency
- add the bacon back in and garnish with green onion
