army stew (budae jjigae)

Ingredients

stew

  • 4 cups beef bone broth or dash stock
  • 1/2 can spam cut into bite sized pieces
  • 1/2 block tofu, medium firm cut into bite sized pieces
  • 1 cup rice cakes
  • 1/2 cup kimchi cut into bite sized pieces
  • 1/2 cup enoki mushrooms
  • 1 hot dog cut into bite sized pieces (slice diagonally)
  • 3 green onions cut into 1 inch pieces
  • 1 pack ramen
  • 2 slices american cheese

seasoning paste

  • 3 cloves garlic minced
  • 2 tbsp korean red pepper paste gochujang
  • 1 tbsp korean red pepper flakes gochujaru
  • 1 tbsp sugar
  • 1 tbsp fish sauce
  • 1/2 ramen seasoning packet
  • 1/4 tsp black pepper

Instructions

  • in a shallow pot, add the spam, tofu, rice cakes, kimchi, enoki mushrooms, hot dog, green onions, seasoning sauce, and broth
  • simmer over medium heat for 15 minutes. In the last 5 minutes, add the ramen noodles.
  • cook for another 5 minutes, top with american cheese and enjoy.
