kimchi carbonara

Ingredients

  • 5 pieces bacon sliced
  • 1 tsp reserved bacon grease
  • 5 green onions sliced
  • 2 cloves garlic minced
  • 1 cup kimchi
  • 1 tbsp gochujang
  • 1 tsp sugar
  • 1/2 lb spaghetti
  • 1 cup reserved pasta water

carbonara sauce

  • 1 egg
  • 2 egg yolks
  • 3/4 cup parmesan reggiano freshly grated

Instructions

  • cook the bacon in a pan over medium heat. once the bacon is cooked, remove it from the pan and leave about 1 tsp of bacon grease in the pan
  • over medium heat, sauté the green onions (reserve some for garnish at the end)
  • add the garlic and sauté for about 2 minutes
  • add the kimchi, gochujang, and sugar. continue cooking for about 5 minutes and set aside
  • cook the pasta until al dente. while the pasta is cooking, prepare the carbonara sauce
  • in a small bowl, combine the egg, egg yolks, and cheese. mix thoroughly and set aside
  • reserve about a cup of pasta water, then transfer the pasta into the pan with the kimchi mixture. keep the heat on low
  • add the carbonara sauce and a splash of pasta water. mix together and keep adding pasta water until you reach your desired consistency
  • add the bacon back in and garnish with green onion
  • enjoy!
